Sautéed collard greens

  • 1 bunch collard greens
  • 1 tbsp extra virgin olive oil
  • 1 tbsp sweet onion diced
  • 1 clove garlic minced
  • 1/3 cup vegetable broth or chicken broth
  • 1 pinch red chili pepper flakes
  • 1/4 tsp fine sea salt and fresh ground pepper
  • 1 tbsp red wine vinegar


  • Heat the extra virgin olive oil over medium-high heat. Add the diced onions and sauté for a minute until they begin to go translucent. Stir in the minced garlic. Next, add the greens, broth and season with red chili pepper flakes, sea salt and ground pepper.
  • Turn up the heat until it begins to simmer. Cover and lower the heat slightly. Cook for about 5 minutes. Then remove the lid and continue cooking until liquid has evaporated. Stir in the red wine vinegar and serve immediately.
